Cardamon, known in Chinese medicine, by its pinyin name, Bai Dou Kou, is well known for its medicinal and culinary properties. It is one of the main ingredients in the Indian Garam Marasala sauce, and Cardamon is also used in Finnish sweet bread called Pulla and in the Scandinavian Christmas bread called Julekake. Many cultures over the centuries have used this herb to maintain health and to promote digestion. The most desirable part of the herb has historically been the seeds. Cardamon was imported from India in the 4th century, and it has been considered by herbalists of the Renaissance as the “chief of all seeds.”

Bai Dou Kou is a member of the Zingiberaceae (ginger) family. It is identified by its outer shell, which is thin and papery; its small seed pods and small black seeds; and, its triangular cross section and spindle shape. Its native habitat is in the evergreen forests of India, Nepal, Bhutan and Pakistan. Germany is currently the largest producer of cardamon.
